Starting in Las Vegas makes sense for many other reasons as well, mostly being that Las Vegas is a tourist location in it’s own right.  It has an airport where you are going to be able to find many flight choices, and it also has more hotels and restaurants than nearly any other city in the world.  It makes sense to use the city for it’s built in tourist aspects then leave from there to begin your adventure.  The proximity to Zion Canyon and the ease with which you can fly in and out alone make it the best choice.
